Lentil Soup
Don't settle for a bland lentil soup. Make it right, and you'll have everyone begging for seconds...and thirds! The touch of spices and finishing it off with lemon really lifts this soup to the next level.

Oven Baked Pork Chops with Potatoes
This is a sauce made for baked pork chops. It makes them come out golden and sticky, rather than pale and bland. It's a country-style sauce that's savoury and a bit sweet! Potatoes are optional - or sub with other roastable veg.

Portuguese Chicken and Rice
Peri peri-rubbed chicken cooked in the same pot as a spicy rice: essentially a one-pot chicken paella. The rice alone is worth making it for.

Pasta alla Norma
This is a traditional Italian pasta dish from Sicily, usually begun by cooking eggplant on the stove in a hefty amount of oil. I prefer roasting the eggplant - less oil plus the eggplant holds its shape better, especially when you roast at a high temp to caramelise the surface! Finishing with a good amount of fresh basil is traditional but even if you don't have any, there's other alternatives to add a touch of other flavour - such as fresh thyme, or extra dried herbs in the sauce. This is an excellent and satisfyingly "meaty" vegetarian main dish that will have even card-carrying carnivores asking for seconds!

Spinach & Ricotta Pasta Bake
A lazy meal for midweek that tastes like spinach and ricotta stuffed shells or cannelloni - but without all the labour! Feel free to use your favourite store bought pasta sauce if you prefer. Reheats well and freezes well too!

One-Pan Mongolian Beef Noodles with Broccoli
Here's the newest version of the much-loved One Pan Asian Beef Noodles (2019!). The noodles cook right in the sauce - no separate boiling - so they soak up the tasty flavour of the sauce while their starch thickens the sauce so it coats everything beautifully. Today's version uses the sauce from everybody's favourite Mongolian Lamb, plus plenty of broccoli for a complete dinner. No need to fear precision with this recipe - those noodle cakes are indestructible!

Smoked Sausage and Rice
The smoked sausage is the trick here to get great flavour into this quick one pot dinner. Tastes like Jambalaya, minus the cajun flavours, and much faster to make. Everybody loves this!I used kransky sausages but you can use any smoked sausages you want, including chorizo. You can even use raw sausages - see Note 1! Also feel free to use other vegetables - anything that can hold up to 20 minutes on the stove.

Pork Stir Fry with Green Beans
A simplified version of the popular Szechuan dish Stir Fried Green Beans with Minced Pork. Same flavour punch but made with everyday ingredients. Has intense flavour so you won't miss the sauciness of usual stir fries. Mix it up with rice then eaten with a spoon - forget chopsticks! Don’t skip charring the beans, it's the defining feature of this stir frySpiciness: Mild. Similar - try the Japanese version of this dish, on RecipeTin Japan!

One Pot Greek Chicken and Lemon Rice
The best chicken and rice recipe in the world!! This is not an authentic Greek dish (as far as I know!) but it is made using classic Greek ingredients. The beauty of this is that it is all made in one pot / pan. Cooking the rice with the chicken on top adds extra flavour to the rice because the chicken juices get soaked up by the rice. MARINATING TIME: 20 minutes to overnight. {Recipe video above} SCALE RECIPE using servings slider - hover mouse over Servings.

Monster Cookies
These gnarly looking cookies are a mash up of choc chip, peanut butter and oatmeal cookies They're crispy on the edges and chewy inside, littered with bright M&M's and melty chocolate chips, and are as fun to make as they are to eat! Feel free to use any add-ins of choice, like toffee chips, nuts, dried fruit, 1 1/2 cups in total.

Oven Baked Chicken Schnitzel
Using the tried-and-loved method from Truly Crunchy Baked Chicken Tenders, these oven-baked schnitzels really are golden and crunchy all over, without overcooking the chicken inside! It's also pretty great that you can pull 4 hot schnitzels out of the oven rather than frying one-by-one. The trick is to toast the panko in the oven first (effortless!), then use an extra-strong egg-and-flour dredge so the crumbs stick well, and bake for just 13 minutes in a hot oven. Marinate the chicken in the egg mixture if you can for extra flavour and juiciness. But it's still worth making if you don't!
