A creamy, filling soup with Italian sausage, potatoes, beans and kale, lighter than the restaurant version but made from scratch.

Italian sausage225 g
yellow onion — diced1 ea

canned great northern beans — drained and rinsed425 g
smoked paprika — ½ tsp1.3 g
chicken broth710 ml
red potatoes — thinly sliced450 g
kale — stems removed and chopped225 g
half and half — room temperature475 ml

Method

Add the sausage to a large soup pot and sauté over medium heat, breaking it up into small pieces as it cooks. The sausage should contain enough fat to keep it from sticking; if not, add a touch of olive oil. It's okay if a small amount browns on the bottom of the pot.
While the sausage is cooking, dice the onion and mince the garlic. Add them to the pot and sauté until the onions are softened. The moisture from the onions helps dissolve any browned bits of sausage off the bottom of the pot.

Vegetarian sausage has little fat, so brown it in a splash of olive oil for 4 to 5 minutes before adding the onion; the rest of the timing is unchanged.
Vegan

- 710 ml Vegetable broth instead of chicken broth
- 475 ml Unsweetened oat milk instead of half and half
Brown the vegan sausage in a splash of olive oil for 4 to 5 minutes before the onion; temper the oat milk the same way and keep it below a boil so it does not split.
Gluten-free
- 225 g Gluten-free Italian sausage instead of Italian sausage
Nothing changes in the cooking.
Dairy-free
- 475 ml Unsweetened oat milk instead of half and half
Temper and add the oat milk as in step 6 and keep it below a boil so it does not split.
