Strawberry Flower Pancakes

A strawberry slice for the middle, blobs of batter for the petals.
Ingredients
- Self-raising flour150 g
- White sugar15 g
- Free range eggs1 ea
- Milk190 ml
- Vanilla extract5 ml
- Strawberries250 g
Method
- Whisk the self-raising flour, sugar, egg, milk and vanilla until smooth.
- Slice the strawberries into rounds.
- Heat a lightly greased frying pan over medium-low heat.
- Lay a strawberry slice in the pan and spoon five small blobs of batter around it to make petals, letting them just touch.
- Cook until bubbles set on top, then flip and cook the other side briefly.
- Cool completely, then freeze in a bag — one goes into the lunchbox frozen in the morning and is ready by recess.

- Leave out the Free range eggs
- 210 ml Soy milk instead of Milk
The batter is a little softer without egg, so cook the petals a minute longer on the first side before flipping.
