Spicy Tuna Stew (Chamchi-jjigae)

A quick and easy Korean stew made with canned tuna, onion, green chili peppers, gochujang and gochugaru. Delicious with rice and lettuce wraps.
Ingredients
- canned tuna450 g
- onion — cut into chunks280 g
- long green chili peppers — sliced2 ea
- gochujang40 g
- gochugaru12 g
- soy sauce15 ml
- garlic cloves — minced4 ea
- green onions — chopped2 ea
- head lettuce — leaves separated, to serve1 ea
Method
- Spread the onion over the bottom of a shallow pan. Add half of the sliced green chili peppers over top.
- Add the tuna, gochujang (use up to 3 tablespoons if you like it spicier), gochugaru, soy sauce and 360 ml water.
- Cover and cook for 10 minutes over medium-high heat.
- Uncover and stir with a wooden spoon to mix it up.
- Stir in the garlic, green onion and the rest of the sliced green chili peppers.

Nothing changes in the cooking; tamari is a little stronger, so taste before adding extra salt.
