Method

Start the rice so it is ready when the curry is.
Cook the diced onion in the oil over medium heat for 8 minutes until soft and golden at the edges.
Add the crushed garlic, grated ginger and curry powder and stir for 1 minute until fragrant.
Add the mince and brown it well, breaking up the lumps with a wooden spoon.
Stir in the tinned tomatoes and diced potato with a splash of water, cover, and simmer for 20 minutes until the potato is tender.
