A vegetable egg bake for meal prep: eggs, cheddar and veg baked on a sheet pan and sliced into portions.

milk60 ml
cheddar cheese — grated60 g
spinach — chopped60 g
red pepper — diced1 ea
cherry tomatoes — 10; sliced150 g
spring onions — 4; sliced60 g
broccoli — 1/2 head; cut into small florets175 g

Method

Preheat the oven to 200°C (180°C fan) / Gas 6 and lightly oil a large sheet pan.
Crack the eggs into a large bowl, add the milk and a pinch of salt and pepper and whisk together.
Add the cheese, spinach, red pepper, tomatoes, spring onions and broccoli and mix well.
Pour the mixture into the sheet pan.
Bake for 20-25 minutes, until the eggs are cooked and firm.
Leave to cool for a few minutes, then cut into slices.
