Cottage Cheese Chocolate Mousse

A high protein chocolate mousse made by blending cottage cheese, cacao, maple syrup and vanilla until smooth.

Ingredients
- fat-free cottage cheese220 g
- cacao powder20 g
- maple syrup30 ml
- vanilla extract5 ml
- dark chocolate — optional, for the topping20 g
Method
- Put the cottage cheese, cacao powder, maple syrup and vanilla extract into a blender and blend until smooth, scraping down the sides as needed. This takes about 45 seconds.
- Pour into serving glasses.
- For the optional topping, melt the dark chocolate and drizzle a thin layer over the mousse. Refrigerate until set.

- 220 g Silken tofu instead of fat-free cottage cheese
- 20 g Dairy-free dark chocolate instead of dark chocolate
Blend the silken tofu with the cacao, maple and vanilla exactly as before; chill for at least an hour so it sets firmer.
