Ingredients

Lean beef steak600 g
Long grain rice300 g
Broccoli500 g
Brown onion150 g
Garlic15 g
Fresh ginger15 g
Soy sauce80 ml
Honey30 g
Vegetable oil30 ml

Method

Start the rice so it is ready when the stir-fry is.
Slice the beef as thinly as you can across the grain and toss it with the grated ginger and half the soy sauce.
Cut the broccoli into small florets and blanch for 2 minutes in boiling water, then drain well.
Heat half the oil in a wok over high heat and sear the beef in two batches for 1-2 minutes each, then set aside.
Add the remaining oil and stir-fry the sliced onion and garlic for 2 minutes, then return the broccoli and beef.
Add the honey, the remaining soy sauce and a splash of water and toss for 1 minute until everything is glossy. Serve over the rice.

Sear the prawns in two batches for 1-2 minutes each until just pink, then set aside as for the beef.

Press and cube the tofu, toss it with the ginger and soy, and brown it in two batches for 5-6 minutes each instead of the 1-2 minutes for beef.

- 30 ml Maple syrup instead of Honey
